1.0. INTRODUCTION:

Ginger is a popular crop across many human communities around the world. It is an underground rhizome; it is a perennial tropical crop called Ginger plant of the Division Zingiberofficinale. Originally, the plant is naturally found in South-Eastern Asia, as aeons and decades went by it was cultivated extensively across the world in parts like the Caribbean, the Americas and Africa. Presently, the top growers of the crop include Jamaica, Indonesia, Fiji etc.

A mature ginger rhizome is fibrous and has a striated texture. The outer skin of the rhizome is brownish in color while the inner flesh depending on the variety may be red, yellow or white. The most popular in Nigeria, amongst the variety, is the ginger with the yellow inner flesh.

Nigeria is the third-largest exporter of ginger in Africa and the third-largest in the world trailing behind China and India. In the Nigerian market, ginger is well known and on high demand despite its expensiveness.

The dried ginger that are always exported for international trade are simply sun dried over a few days with no need for intensive processes or complex gismos, but there is always need for artificial drying in parts of the world without definite or a lengthy dry season to dry the ginger so its coincides with the harvest when ready for export.

The drying of the rhizomes is targeted to reduce the moisture content of each rhizome to 10 or 12 percent moisture content. Dried ginger is usually in a split or sliced form where splitting is the more preferred method of the duo as slicing loses more flavor, but the processing of the sliced forms of dried ginger is easier which makes it remain pertinent and stops it from going into obsolescence, as sliced are easier to grind and this is the reason for its predominance in the market.

2.0. SUMMARY

In Nigeria, harvesting of ginger starts from October and normally continues until April/May making the whole cycle last for 7-8 months. But this cycle largely depends on demand and market situation as ginger can be left on the ground (not harvested) for two years.

Ginger is produced in six states of the Federation namely, Kaduna, Nasarawa, Benue, Niger and Gombe with Kaduna leading the pack as the major producer. Nigeria’s production in 2005 estimated at 110,000 metric tons (FAO). In the market, ginger is available in various forms; fresh ginger rhizome, powder ginger and dry ginger rhizome. Out of this, 10% consumed as fresh ginger while 90% is dried primarily for the export markets.

Ginger can be processed into a wide variety of products. The products that can be derived from ginger could go on and on, some of them are dehydrated ginger, ginger candy, ginger powder even ginger oil oleoresins and so on. Ginger is an important commercial crop due to its versatile applications. One of them being its use as an ingredient in household kitchens, ginger is used industrially for flavoring many processed and packaged food products, it can also be used to flavor like tomato sauce ketchup, salad dressings, meat sausages, gravies, pickles, curry dishes and so on.

Its medicinal properties also contribute to its holistic versatility, as it helps digestion and absorption of food and bears antiseptic properties. Ginger based products have a wide range of applications in many industries like food processing, pharmaceutical, soft drinks, meat canning, confectionery, tobacco processing, soap making and the list goes on. The demand for the processed products increasing day by day due to its convenience to handle and use. There are good export prospects as well.
